Potosi Tres Dragones

The founding farm of CGLE, Potosi farm has a rich heritage of excellence, producing some of the most consistently great coffees out of the Valle del Cuaca region. This farm has been in the Herrera family since 1945. Originally, the farm has produced Caturra and Columbia varieties, with Geisha and Sidra being added to the list of varieties grown there in 2018. Patosi has been a hotspot of experimentation, with many varieties, processing and drying methods being tested, pushing the boundaries and being an early leader in innovation at origin.
Processing: A fire destroying one of the mills on Potosi farm was an inflection point in the story of our coffee. The Hererra brothers used this as an opportunity to redesign the mill around three large mechanical dryers, powered by flames to speed up the initial drying phase of the coffee. The flames are said to visibly flare out of the dryers during this process, giving the three dryers the appearance of three fire-breathing dragons, giving this processing method its name, Tres Dragones.
The coffee is picked and allowed to ferment at a low, controlled temperature for around two days, after which the mechanical dryers are fired up (literally) and the coffee is left to dry at around 40 degrees for a further two days, after which it is transferred to dry on open patios for 15 days.
Coffee: The enhanced fermentation and drying produces a flavor-profile worthy of a name like Tres Dragones. Big, boozy and juicy! This coffee is one of the finest examples of how experimental processing can produce clean and vibrant drinking experiences.
Layered sweetness with notes reminding us of cherry sherbet and raspberry, the processing highlights an effervescence in this coffee’s flavour, while giving it a BIG body and texture that compliments the fruity sweetness. This coffee has an unmistakable identity and stands as a testament to the resilience of Patosi farm and CGLE as a whole

Migoti Coffee Company is a vision of Dan Brose, conceived in 2015 during long car trips across Burundi with Pontien Ntunzwenimana, a local engineer. Their vision is to connect local Burundian coffee farmers, through quality coffee processing and transparent supply chains, with buyers and roasters from around the world. Dan and Pontien, both born in Burundi, desire to see coffee-producing communities economically transformed, with coffee as a catalyst for the growth. Trained as engineers, Pontien and Dan have a clear understanding of how to build, operate and continually improve systems. Dan’s many years of experience in business and humanitarian development work, and Pontien’s childhood roots in a coffee-producing community make them a powerful team to partner with the local community for long-term transformation. Prior to 2015, the multi-generational coffee farmers in Pontien’s home community had all but abandoned coffee as a source of income due to the 12 year civil war (1993-2005) when their Arabica coffee trees were neglected and destroyed. Another challenge was the great distance between their small farms and washing stations, which led many farmers to process lower quality coffee on their farms.
With peace in the country and a state-of-the-art coffee washing station that Pontien built in 2016, the local community has new-found hope for the future and farmers are excited to invest in their coffee farms. Pontien’s first full year of green coffee production in 2016 proved the local coffee to be some of the best in Burundi, and Pontien continues to work with local farmers to improve quality and quantity in order to build a brighter future for their families and the next generation. Quality coffee production is just one of the entrepreneurial projects that Pontien has planned in his community. He and Dan are actively developing a small hydropower plant to provide low-cost renewable energy to the local community and to the coffee washing station. He is investigating new crops for the coffee farmers to inter crop with their coffee trees – such as essential oil crops which will be processed into essential oils at Migoti Mountain. And he is planning to build an eco-lodge at the Migoti Mountain site for tourists who want to visit this beautiful part of Burundi and to learn about the origins of coffee and essential oils.

Colombian coffees have the reputation of funky and wild flavours. Delagua Coffee Paradise aims to control and expertly nurture these wild flavours to create clarity and balance in the cup.
Delagua’s mission statement is conservation.“This project focuses on producing natural and honey processed micro-lots, using the minimum amount of water in doing so. Through an inclusive, community–based model, they guide their team and neighboring coffee growers, encouraging them to become guardians of the ecosystem.”
Delagua supports 68 small holder farmers in the Cienaga region, one of whom is Danger Ruedes.
