Coffee Origins
Pepe Jijon must be one of the coolest producers in coffee. Dario and Pepe started talking last year while in the hunt for exceptional competition coffees. Pepe and his team at Finca Soledad developed the tyoxidator processing method. To start, the coffee is allowed to ferment aerobically in open tanks to promote oxygenated fermentation. After this, the coffee is pulped and further fermented in it’s mucilage in a sealed tank for 48 hours. The coffee is then fully washed and dried in both direct and indirect sunlight for 20 days.
This coffee is a sydra varietal, hence the name “SyOxy”. Inspired by the ever-changing processes of nature and the natural forest around him, Pepe, an ex-mountain climber, has developed all of his processing methods by taking cues from nature. This coffee is bright with an incredible mouthfeel.
Pepe is an adventurer. He was the first Latin American to solo climb the 7 summits. What a beast! Today, together with his family, he farms Gesha, Sidra and Typica Mejorado on Finca Soledad, a 120 hectare cloud forest with just 4 hectares dedicated to coffee. We have been fortunate to spend some time with Pepe and he is full on, passionate about coffee and has a strong desire to give back to nature through his approach to farming.
They are rare, exclusive and the price is indicative of the quality and effort that has gone into producing them.

Single origins: Our roast style and green coffee preference suits both filter and espresso very well.
Each coffee with present different characteristics you may prefer through a specific brew method.
For example Dario loves washed Kenyan’s through the AeroPress, but they taste great as espresso and through the V60.
Blends: Designed with espresso in mind but Dreamer tastes great in the plunger. It’s all down to personal preference!
