Juana Salucio and her husband started producing coffee 25 years ago. Their 5 hectare farm, Canalaj, is named after a special area in their town, Concepcion Huista.
They pick their coffee cherries over multiple days to ensure they only process the ripest cherries. The cherries are depulped the day they are picked, fermented in tubs for 48hrs and then washed. After washing the coffee is soaked for a further 12hrs before being sundried on a patio for 5 days.
