Coffee Origins
Pepe Jijon must be one of the coolest producers in coffee. We discovered Finca Soledad and Pepe’s work in our hunt for competition coffees in 2022. Pepe has essentially slowed down normal natural fermentation – calling it “wave”.He dries the coffee in a temperature controlled dark room for 56 days after a 2 day fermentation and maceration period, giving the coffee a significant amount of time to mature in the flavours of the cherry.
Pepe is an adventurer. He was the first Latin American to solo climb the 7 summits. What a beast! Today, together with his family, he farms Gesha, Sidra and Typica Mejorado on Finca Soledad, a 120 hectare cloud forest with just 4 hectares dedicated to coffee. We have been fortunate to spend some time with Pepe and he is full on, passionate about coffee and has a strong desire to give back to nature through his approach to farming.
They are rare, exclusive and the price is indicative of the quality and effort that has gone into producing them.

Single origins: Our roast style and green coffee preference suits both filter and espresso very well.
Each coffee with present different characteristics you may prefer through a specific brew method.
For example Dario loves washed Kenyan’s through the AeroPress, but they taste great as espresso and through the V60.
Blends: Designed with espresso in mind but Dreamer tastes great in the plunger. It’s all down to personal preference!
Major centres, 2-3 days. Outlying 2-5 days depending on how far out-of-the-way the location is.
