Coffee Origins
Steeped in a rich history of coffee production, Los Pirineos has been in the Baraona family since 1889, making it one of the longest standing coffee producing farms in El Salvador, and the world. Situated atop a dormant volcano, setting the scene for dramatic views of the valleys below, often sitting above cloud cover, giving this farm a magical aura to match its wealth of high quality coffee production. Over more than a century, the Baraona family have built a reputation of excellence, experimenting with different varietals and setting the standard globally for quality coffee from South America. Diego Baraona, somewhat of a renaissance man, being an accomplished athlete, an engineer and a wizard with a guitar, took over the farm in 2020 after the sudden death of his father, Gilberto Baraona. Diego was not planning on becoming a coffee producer, but Gilberto had built a stellar reputation, leaving big shoes to fill, having won 17 Cup of Excellence awards and establishing Los Pirineos as a leader in experimental processing in El Salvador. Diego knew that he had to uphold the family legacy. Since that time, Diego has led the farm further down the road his father had paved, leading innovation in processing and agronomy on the farm. The farm grows over 70 different varietals, with several experimental plots for research, most notably being one of the globes most important nurseries of Pacamara coffee, and owns the largest seed bank in El Salvador. A farm and family steeped in a rich and extensive heritage of coffee agriculture and production, we are proud to have their coffee in our roastery.
Los Pirineos is famous for its Bourbon trees, producing some of the best coffee of this variety year upon year. The farm is home to Bourbon trees planted nearly a century ago, standing the test of time to produce some of the most famous and delicious coffee to come out of South America. The coffee is harvested and sorted, ensuring only the best cherries are selected, they are then placed in sealed fermentation barrels for 72 hours and the temperature is carefully controlled to stay around 16C. After this, the barrels are opened and an aerobic fermentation commences for a further 72 hours. The coffee is then dried on raised beds, which Los Pirineos is famous for, as its drying facilities sit in a natural wind funnel, allowing rapid drying of the coffee, locking in those incredible processing characteristics. In this coffee we taste deep red fruit characteristics, black cherry and red grape sweetness compliment a citric characteristic reminiscent of sweet blood orange. The processing amplifies the sweetness of the Bourbon varietal produced by these trees, standing as a testament steeped in tradition to the work the team at Los Pirineos has put in for many generations.

Each coffee with present different characteristics you may prefer through a specific brew method.
For example Dario loves washed Kenyan’s through the AeroPress, but they taste great as espresso and through the V60.
Blends: Designed with espresso in mind but Dreamer tastes great in the plunger. It’s all down to personal preference!
