We, alongside our friends Minimalist Wines, are so excited to finally release this exceptional box with you. It has been 3 years in the making (which is 3 minutes in wine years, but 30 years in coffee years 😆). This exclusive release was inspired by our mutual love for flavour, and the acknowledgement of wine and coffee’s many similarities when it comes to processing and flavour expression. Minimalist believes in low intervention when producing their wines (as their name alludes to), allowing the wine to express terroir and preserving the delicate sugars and flavours that naturally occur in the grapes, sourcing his grapes from carefully selected lots all around the cape and processing them in their urban cellar in Cape Town. With a deep passion for Syrah, it’s no surprise that we wanted to share one of Sam’s beautiful anaerobically processed Syrah’s with you alongside this coffee.

To highlight the kindred processing methods of wine and coffee, we chose an anaerobically processed natural pink bourbon from La Palma y El Tucan. This coffee is berry-forward and truly captures what we love about controlled anaerobic processing, it is clean and expressive. La Palma & El Tucan have gained their world-famous reputation by rigorous experimentation in fermentation processes: backed by science, technology, and data analysis that allows them an intimate understanding of even the most minute detail. Through this commitment they standardize processes and replicate them more easily. The results have produced some of the mot balanced anaerobic coffees we have tasted.
