Coffee Origins

Los Pirineos has been growing exotic varietals for many years. One of the most famous is their Pink Bourbon. Pink Bourbon is a varietal sharing genetics with Ethiopian landraces that has gained prominence in South American growing countries over the last few years for it’s distinctly floral and sweet flavour profile, which points to its lineage in Ethiopian Heirloom varietals. Los Pirineos’ rendition of Pink Bourbon captures the delicate stonefruit sweetness of this coffee, reminding us of sweet plums and a florality and acidity that leans toward blackberry flavours. Although only a humble washed process, the varietal characteristics of this coffee along with the unique microclimate and agronomy of Los Pirineos pack a powerful, flavourful punch. Delicate florals dance across your taste buds as the deep fruit sweetness gives way to a floral honey finish, calling back once more to the Ethiopian lineage of this incredible coffee. An ode to the traditional washed process which sets the stage to perfectly showcase the incredible farm and its skilled producer.
Steeped in a rich history of coffee production, Los Pirineos has been in the Baraona family since 1889, making it one of the longest standing coffee producing farms in El Salvador, and the world. Situated atop a dormant volcano, setting the scene for dramatic views of the valleys below, often sitting above cloud cover, giving this farm a magical aura to match its wealth of high quality coffee production. Over more than a century, the Baraona family have built a reputation of excellence, experimenting with different varietals and setting the standard globally for quality coffee from South America. Diego Baraona, somewhat of a renaissance man, being an accomplished athlete, an engineer and a wizard with a guitar, took over the farm in 2020 after the sudden death of his father, Gilberto Baraona. Diego was not planning on becoming a coffee producer, but Gilberto had built a stellar reputation, leaving big shoes to fill, having won 17 Cup of Excellence awards and establishing Los Pirineos as a leader in experimental processing in El Salvador. Diego knew that he had to uphold the family legacy. Since that time, Diego has led the farm further down the road his father had paved, leading innovation in processing and agronomy on the farm. The farm grows over 70 different varietals, with several experimental plots for research, most notably being one of the globes most important nurseries of Pacamara coffee, and owns the largest seed bank in El Salvador. A farm and family steeped in a rich and extensive heritage of coffee agriculture and production, we are proud to have their coffee in our roastery.

FAQs

What is the best brew method for each coffee?

Single origins: Our roast style and green coffee preference suits both filter and espresso very well.

Each coffee with present different characteristics you may prefer through a specific brew method.

For example Dario loves washed Kenyan’s through the AeroPress, but they taste great as espresso and through the V60.

Blends: Designed with espresso in mind but Dreamer tastes great in the plunger. It’s all down to personal preference!

How long does delivery take?

Major centres, 2-3 days. Outlying 2-5 days depending on how far out-of-the-way the location is.
